A boat's galley writes its own rules: limited space, limited equipment, a floor that moves. Chef Tufan Pehlivan designs the menu precisely for these conditions. What gets cooked in the galley, what is prepared in advance, how service flows at sea — all of it is engineered before you ever step aboard. You only see the result: a flawless table.
